Brining the perfect turkey

Our Thanksgiving was a huge success. We cooked a free-range heritage turkey for the first time this year and the husband proclaimed it was one of the most tender and moist turkeys we’ve ever prepared. We picked the turkey up from a local farm the Sunday before Thanksgiving and beginning Monday began a dry-brine procedure. I have wet-brined turkeys in the past and they were always pretty good. One year in particular, our extra large turkey was in the brine for 24 hours. We were able to set it in our unheated garage overnight where it was kept nice and cold as it was too big to refrigerate. This year our turkey was smaller since there were only three of us for dinner. A dry brine is a simple method of rubbing Kosher salt into the turkey’s skin and storing the bird in a large plastic bag in the refrigerator. For three days we gave our turkey a daily massage, not adding salt but rubbing in the salt we used the first day.

Will Irish Eyes Be Smiling?

Will Irish eyes be smiling following Saturday's Division V state title game against Findlay Liberty Benton? They can be, if the Irish are sound in the kicking game and stay away from turnovers. Last year, when the Irish fell 20-14 to Maria Stein Local, a blocked punt doomed their hopes for a win. And earlier in the playoffs, the one game they had trouble in was also where they had special teams issues. Two things they have going for them are the desire to get back into the state title game after last year's defeat and a chip on their shoulders. Before the season, coach Dan Reardon told me the primary factor for his club was to get back to the title game and wash away the 2007 defeat from their mouths. At their rally Wednesday, Reardon said he was perturbed that the Eagles had the all state offensive and defensive players of the year and that his Irish were seemingly ignored. ``I guess we have something to prove,' he told the student body.

Free Springsteen music today

“Working on a Dream,’’ the song Bruce Springsteen played live for the first time at the Barack Obama rally in Cleveland on Nov. 2, is available today only as a free download. The song is the first single and the title track from Springsteen’s next album, which will arrive in stores on Jan. 27 just before Bruce and the E Street Band provide half time entertainment for the Super Bowl. Many of the songs on the disc were recorded during the same sessions that produced his 2007 disc “Magic.” The CD also will include “The Wrestler,” the song Springsteen wrote for the soundtrack to Darren Aronofsky’s upcoming film starring Mickey Rourke. “Working on a Dream” is available for free Monday only on iTunes and on Bruce Springsteen’s Web site. After today, the song will be available for sale exclusively through iTunes through Dec. 9.

Ugly scene

Randy Lerner couldn't have liked what he saw at Cleveland Browns Stadium on Sunday, and not just the outcome. The Browns lost for the sixth time in seven home games this season, 10-6 to the Indianapolis Colts. When the teams lined up for the kick off shortly after 1 p.m., the stands appeared to be half empty. Eventually, late arrivals filled a majority of the seats, but the sight of so many orange seats at kick off had to discourage the Browns owner. Lerner talked at length to reporters last week, stressing his commitment to putting an exciting, winning team on the field. If Lerner wants to excite the fans when the season is over, he'll need to start by naming a head coach that will present an image of hope, assuming Romeo Crennel is let go. Lerner can't afford to go with another "hot" coordinator -- been there, done that -- or a college coach, unless you're talking Jim Tressel or Urban Meyer.

Browns need changes

Cleveland Browns fans don't want to hear it, but this franchise needs a fresh start. But how many times can that happen? Didn't the Browns clean house after the firings of both Chris Palmer and Butch Davis? Don't the departures of Dwight Clark and Carmen Policy count as a housecleaning? Now we're four years into the Phil Savage-Romeo Crennel Era and the Browns remain a joke on and off the field. Sure, they beat the New York Giants and Buffalo Bills on Monday Night Football. But they're 4-7 this season and all but out of the playoff picture. Crennel still hasn't beaten the Pittsburgh Steelers. His Browns teams are 0-7 against their biggest rival and 2-5 against the Cincinnati Bengals. Savage and Crennel can't seem to pick a starting quarterback. They went into this season with no proven NFL cornerbacks and then wonder why Denver's Jay Cutler shredded the Browns' defense in a recent Thursday night game.

Added a new one to the family

Just added a new one to the family. That's pretty quick, considering the fact that my wife and I were married only about a month ago. Now, through adoption, we are adding one more to the family. No, I know what you are thinking. It's not that. It's a dog. We got her from the Animal Welfare League of Trumbull County on Brunstetter Road. She is the second dog I have adopted from the shelter there in the past five-or-so years. What kind of dog is it? A Brussels Griffon. Not the prettiest dog in the place. Maybe one of the ugliest, with it's monkey-shaped head and odd teeth. Went to the Welfare League to look at a Yorkie, came home with this. Go figure. But she has a wonderful personality and is about 2 or 3 years old. I've never seen a dog with an overbite or underbite, but I'm told it's normal for this breed. I always get a good feeling getting a dog after it has been removed from undesireable conditions. This one is no exception.
