Woulda, shoulda, coulda

It was the best of times, it was…oh wait, that’s been done.

And so was my breakfast this morning. Instead of the healthier oatmeal I was planning, the husband got up early for a physical therapy appointment (he suffered a shoulder injury a few months ago while pushing a car off of a trailer. He doesn’t believe me when I tell him he’s not 25 anymore), and while I was reading e-mail in the living room, he shouted from the kitchen, “You want some breakfast?”

Of course I did and even better, I didn’t have to make it. So instead of this (see photo), he made eggs and toast. I didn’t get a photo, but you know what eggs and toast look like.

Don’t get me wrong, eggs are not only one of the most healthy food items around, but the toast was 100 percent whole wheat as well. And eggs are filling. The fat and protein stays with us long after our cereal has been digested.

Unfortunately, the eggs weren’t the free-range, fresh brown eggs we were spoiled by all last summer. Chickens, it seems, stop laying when the weather turns cold. We were more than just a little disappointed when our local farm informed us there would be no eggs until the temperatures rose and the chickens felt the need to produce eggs once more.

Just last week, my husband, who originally had a hard time wrapping his head around fresh, brown eggs, said, “I can sure tell the difference between these eggs and the ones we got from the farm.”

His epiphany came one morning when he cracked open a white, grocery store purchased egg, only to have the white portion flow like lava across the griddle and escape into the grease trough. A really fresh egg wouldn’t have done that. Our farm eggs not only have darker, richer yolks, but the white is firm and stays within the immediate vicinity of where it lands on the pan.

C’mon chickens. We’re patiently waiting for your return
